Roof slope is one of those details that does not seem important until the first big storm, and then it is the only thing that matters. Insulated aluminum panels are not flat-roof products — they shed water, they do not hold it back like a membrane — so they have a minimum pitch, and going below it is asking for ponding and leaks at the joints.
The minimum slopes
As a working guide:

Standing seam can go lower because the joint sits higher above the roof plane and is mechanically closed — the water path is further from the surface. Concealed-fix needs a bit more slope to drain reliably.
Why going too flat bites you
Below the minimum, water drains slowly and ponds in any slight deflection between purlins. Standing water finds its way to joints and laps, and over time it gets in. It also leaves dirt and mineral staining. None of this shows on the day the roof goes on — it shows up a year or two later, which is the worst time to discover it.
Longer panels need more attention
On long panel runs, even a correct nominal pitch can flatten out from deflection if the structure is not stiff enough. On big spans, err on the side of a touch more slope, and make sure end laps (if any) are properly sealed and sit on a slope, not in a valley.
